Cut and Come Again Cake

Editor’s note: These recipes have been transcribed almost exactly as written in Gran’s recipe book. (I’ve changed things like “8 oz” to “1 cup.”) According to Gran, “mixed spice” is a combination of cinnamon, nutmeg, and allspice. Please go ahead and substitute unsalted butter or coconut oil for the margarine. For the mixed fruit, any dried fruit will work; Gran suggests using raisins, cranberries, and/or blueberries. A gill is an old British measurement; one gill equals 1/4 pint, or 4 ounces.

1 cup self rising flour

1/4 tsp salt

1 tsp mixed spice

1/2 cup margarine

1/2 cup sugar 

3/4 cup mixed fruit

1 tsp grated orange or lemon rind

1 egg

3/4 gill  [3 ounces] milk

Line a 6-inch cake tin with parchment paper. Sieve flour, salt and spice into a bowl, rub in the margarine thoroughly then stir in the grated rind, sugar and fruit. Make a well in the centre, add the beaten egg and milk. Stir and then beat well. Put the mixture into the tin and bake in a moderate oven for 1 hour and 20 minutes.
